Coke Farm Spinach Recipe
Confirmed as being a very tasty recipe, it’s sent to us from Dale Coke of Coke Farms in San Juan Bautista:
Spinach with Currants and Pine Nuts Serves 4 to 6
Ingredients 2 pounds spinach, stemmed, washed but not dried, and coarsely chopped ¼ C extra virgin olive oil ¼ C pine nuts 2 cloves garlic, finely minced ¼ C dried currants or chopped raisins Salt and Pepper, to taste
Procedure
- Place spinach in a large saucepan and season with salt and pepper to taste.
- Heat until wilted, about 5 minutes. Drain well.
- Heat in a large skillet olive oil and pine nuts. Cook just until they begin to color, about 2 minutes.
- Add minced garlic and cook another minute.
- Add spinach with currants/raisins and more salt and pepper to taste.
- Cook, stirring frequently, about five minutes more.
- Serve hot and enjoy!
Sweet Dreams Roasted Red Peppers
Sopcic from Sweet Dreams Café sends us a recipe her son Lou translated from Croatian:
Roasted Red Peppers
- Broil peppers and char skin on all sides—but do not burn.
- Take out of oven and immediately cover in parchment paper until it cools enough to touch.
- Slice as you prefer and from here it’s easy: Add, to taste, salt and pepper, olive oil, apple cider or balsamic vinegar, and finely chopped garlic.
- Marinate for several hours.
- Serve on sandwiches, in salads, or with your favorite entrée. They will keep for up to a week.

From the Bruno’s of Gary, Indiana’s one and only family-owned Juice Garden come their kids’ favorite cookie:
Apple-Oatmeal-Honey “Goodies”
Makes 5 dozen
Ingredients ½ C Butter ½ C “Sugar in the Raw” ½ C Honey 2 Eggs, beaten 1 C Gala Apples, diced ½ C Thick Rolled Oats 1 ¾ C Unbleached Wheat Flour ½ tsp. Baking Soda ½ tsp. Baking Powder ¼ tsp. Sea Salt ? tsp. Cinnamon ¼ tsp. Cloves 1 ½ C Chopped Walnuts 1 C Organic Raisins
Procedure
- Cream butter and sugar in large mixing bowl.
- Gradually add honey to butter and sugar mixture, beating well.
- Add eggs and mix with beater.
- Add chopped apples and oats.
- Sift dry ingredients together in separate bowl and add to first mixture.
- Stir in nuts and raisins.
- Drop by teaspoonfuls onto buttered cookie sheet.
- Bake at 350° for 10 minutes.
