Gold pineapples
Over the next few weeks, you'll find still another organic

gold pineapples.
This exotic tropical
fruit, grown organically in Costa Rica, is a versatile and
easy-to use ingredient in your meal planning. It's
very sweet, very juicy and high in vitamin C. It can
be served fresh sliced, in fruit drinks, in salads and in
your cooking and baking.
Nutrition
First, pineapple is a
great source of vitamin C. Two good-sized slices can
provide 120% of the USDA's minimum daily requirement for
vitamin C.
In addition, pineapple is
naturally fat free (including no saturated fats), is
naturally cholesterol free and has very low sodium.
History
Indigenous peoples of
South America developed the pineapple and carried it with
them as they migrated to Central America and the Caribbean.
Pineapple was
"discovered" by Columbus and his crew on his second trip to
the Caribbean. He brought this then rare fruit back to
Europe, where it became known as the "treat of kings".
In colonial America, the
pineapple was a feature in creative food displays (these
displays were a statement of personality and wealth).
From this art form, the pineapple became a symbol of welcome
and hospitality in the home and, in turn, was related to
family, friends and good times.
Some
tips
Pineapples are picked
ripe, so you must check the fruit at the market to be sure
that it isn't over-ripe. The shell should be firm, the
skin yellow in color and the top should smell sweet.
The night before you
serve the fruit, break the top off, and turn it up-side-down
on a plate in the refrigerator. This allows the
sweetest juices, settled at the bottom during shipping, to
be redistributed throughout the flesh.
