APPLE CRISP

Warm baked apples covered in a flaky, crunchy and buttery oat topping. This is just screaming for vanilla ice cream! Crisps are the perfect vehicle to showcase seasonal fruits and who doesn’t have oats hanging around? You can use any combination of firm and crisp apples like Granny Smith, Gala, Fuji, Honeycrisp, Pink Lady and more. Just pop this in the oven and serve it right out of the dish.

Yields: 6 servings

INGREDIENTS:

1½ cup old fashioned oats (not quick cooking or instant) 
½ cup + 1 tbsp all-purpose flour 
½ cup brown sugar 
½ tsp salt 
8 tbsp (1 stick) cubed, cold unsalted butter 
3# Gala and/or Fuji Apple, cubed 
1 tbsp lemon juice 
1 tsp ground cinnamon 
2 tbsp sugar  

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Combine old-fashioned oats, ½ cup of flour, brown sugar and salt in a large bowl.
  3. Next add the cube butter and using your fingers “cut” the butter into the oat mixture. The mixture should resemble coarse meal.
  4. Put the oat mixture in the refrigerator while you prepare the apples.
  5. In a large bowl, combine cubed apples, lemon juice, cinnamon, sugar and 1 tbsp of flour. Mix to combine.
  6. Place apple mixtures in a buttered cast-iron pan or casserole dish.
  7. Next top with oat mixture.
  8. Bake in the oven until the top is golden brown and the apples are tender and bubbling. Allow it too cool for at least 20 minutes before serving.
