This dish is perfect for breakfast, lunch or even as a side dish for dinner. We take the classic potato hash recipe but modernize it with organic purple fingerling potatoes. Not only is the dish delicious but also it’s colorful and beautiful. We also add sweet bell peppers and spicy Serrano peppers for fiery kick. Purple Potato Hash is a flavorful explosion (and the poached egg is optional).

Yields: 4 servings


3 tbsp extra virgin olive oil 
1# purple fingerling potatoes, sliced 
1 small onion, diced 
1 small orange bell pepper, diced 
1 small red bell pepper, diced 
1 small Serrano pepper, sliced  
salt and black pepper, to taste 


  1. Heat a large sauté pan over medium-high heat.
  2. Add the extra virgin olive oil and allow it to heat up just before it starts smoking.
  3. Next add the sliced purple fingerling potatoes to the pan. Spread them out evenly so they are in one layer. Season with salt and black pepper.
  4. Sauté the purple fingerling potatoes until they are golden brown and cooked about half way through, about 10-15 minutes. Remember to stir them every once in a while so they don’t get too brown on one side.
  5. Next add the onions, bell peppers and Serrano pepper. Season with salt and pepper and stir to combine.
  6. Turn the heat down to medium and continue to cook until potatoes are cooked through and the vegetables are tender, around 15-20 minutes.
